Vanilla Cake
This is the recipe I use for JA's birthday cake and it's always a hit!
1 1/2 cups sifted cake flour
1 1/2 teaspoons baking powder (check expiration date!)
1/4 teaspoons salt
1/2 cup unsalted butter
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup milk
Directions:
1) Preheat the oven to 400℉. Lightly coat an 8-inch cake pan with Baker's Joy. Sift the cake flour, baking powder, and salt into a large mixing bowl.
2) Beat in the butter, 1/4 teaspoon at a time, using a mixer set on low, until the mixture resembles fine, damp sand.
3) Beat in the eggs, one at a time. Add the vanilla and milk, and beat on medium or high, just until blended (don't overbeat!).
4) Pour the batter into the sprayed pan and bake until a wooden skewer inserted in the center comes out clean - 30 to 35 minutes.
5) Cool cake in the pan for 5 minutes.
6) Unmold and cool completely. Ice with Buttercream Frosting.
