Roasted Sweet Potatoes

I LOVE sweet potatoes and this is such a simple recipe. The glaze from the Pork Tenderloin recipe goes great on sweet potatoes, also!








Ingredients:
2 Sweet potatoes
Olive oil
Salt
Pepper

Directions:
1) Adjust rack to middle position and preheat oven to 425℉.
2) Wash and dry sweet potatoes. Peel sweet potatoes and cut into cubes. Toss on a baking sheet with olive oil and season with salt and pepper.
3) Roast sweet potatoes in oven until tender (20-25 minutes, typically).
