Mom's New Year's Hoppin' John
I sadly don't have a picture of this one, and no picture online looked half as delicious as my mom's, so you'll just have to use your imagination!
Ingredients:
2 cans (15.8oz) of blackeye peas (drained)
1 can (28oz) petite diced tomatoes (can be drained, but it's not a necessity)
1 1/2 cups cooked rice (make sure to salt your rice water when cooking)
1 medium-sized onion (diced)
2 cloves of garlic
16oz cubed ham (I prefer the smallest cube option)
3-4 cups of ham stock (make by mixing 32oz water with 2 Tablespoons ham base. Use however much you need to make it as thick/ thin as you like).
Salt
Pepper
Crock Pot Directions:
1) Sautee the onion and garlic in a drizzle of olive oil.
2) In a crock pot, mix the drained peas, the sauteed onion and garlic, the cooked rice, tomatoes, and ham stock.
3) Cook on high for 3 hours and low for 5-6 hours.
Stovetop Directions:
1) Sautee onion and garlic
2) Add tomatoes and simmer for about 5 minutes.
3) Add remaining ingredients and cook on low, stirring frequently. Simmer about 30 minutes, not letting it dry out.
