Honey-Glazed Pork Tenderloin
This is based off of a HelloFresh recipe. I make this all the time now! This one is one of JA's favorites, and mine too!
(Feeds two)
Ingredients:
Pork Tenderloin (not seasoned)
2 chicken stock Concentrates (I used cubes)
Fresh thyme sprigs
Fresh garlic clove
1 Tablespoon butter
Honey
Olive Oil
Salt
Pepper
Directions:
1) Preheat oven to 425℉.
Heat a drizzle of olive oil in a medium pan. Pat pork dry with a paper towel. Lightly season pork with salt and pepper. Cook in pan, turning occasionally, until slightly browned all over (6-8 minutes, typically).
2) While pork cooks, mince or finely chop 1 clove of garlic (or 1 tsp. of minced garlic from a jar) and set aside. Strip 2 tsp. of thyme leaves (or more, if desires) from stems and put with garlic.
3) Once pork is browned, transfer to a baking sheet (keep out the pan for the glaze). Roast in oven to desired doneness (8-12 minutes, typically).
4) For the glaze, heat a drizzle of oil in the pan that the pork was cooked in. Add the garlic and thyme leaves. Cook until fragrant (about 30 seconds, typically). Stir in stock concentrates, 1/4 cup of water, and a drizzle of honey. Scrape up any browned bits on bottom of pan. Simmer until reduced by half (about 3-4 minutes, typically). Add 1 Tbsp. butter and stir to melt. Season with salt and pepper. (If the glaze seems stiff stir in a splash of water.)
5) Let pork rest 2-3 minutes after removing from oven, then thinly slice. Drizzle with glaze and serve.
