Sushi Bowls


Ingredients:
1 serving rice, cooked with sesame oil and rice vinegar, cooled
1/2 of an avocado
1/4 of a cucumber
Small handful of crab meat, coarsely shredded
2 frozen wontons or egg rolls
Yum Yum sauce
Sriracha (mixed with a dab of mayo if you don't like spicy)
Eel sauce*
Chia seeds (I was out of toasted sesame seeds, so I used these instead)


Directions:
1) Cook the wontons/ egg rolls according to the package's instructions.
2) Place a spoonful of rice in the bottom of a soup bowl.
3) Chop avocado into bite sized pieces.
4) Peel the cucumber and thinly slice.
5) Place the shredded crab on the rice, placing the avocado and cucumber around it.
6) Drizzle Yum Yum sauce, sriracha (+mayo if desired), and eel sauce on top.
7) Salt and pepper the avocado and cucumber.
8) Place the wontons/ egg rolls into the bowl.
9) Sprinkle chia seeds on top.

* I get my eel sauce at the sushi counter at Publix. It's a dark, syrup-like sauce
