Grandma Peavy's Graham Cracker Pudding
Ingredients:
- 1 cup butter, melted
- 1 cup brown sugar
- 3 sleeves of graham crackers (24 full cracker sheets, crushed. 1/3 in one bowl and 2/3 in another bowl).
- 1 quart milk
- 1 pinch salt
- 3 egg yoks, beaten
- 3 egg whites
- 1 Tablespoon vanilla
- 1 cup white sugar
- 1/4 cup cornstarch
- 1 teaspoon confectioners sugar
Directions:
1. Preheat oven to 400 degrees F.
2. In a medium bowl, mix butter, brown sugar, and 2/3 of the crushed graham crackers. Press lightly into the bottom of a greased 9x13 baking dish.
3. In a medium saucepan over medium heat, mix milk, salt, egg yolks, vanilla, white sugar, and cornstarch. Stirring constantly, cook until mixture thickens, (about 15 minutes). Pour into the baking dish over graham cracker mixture.
4. In a medium bowl, beat egg whites until soft peaks form, then mix in confectioners sugar. Be sure to mix until there is no (or minimal) liquid left in the bottom of the bowl. Spoon the mixture into the baking dish to lightly coat the surface and then top with the remaining 1/3 crushed graham crackers.
5. Bake 15 minutes or until lightly browned.
